Date & Cashew Bites

If you go to a super market and buy these “energy balls”, they cost stupid amounts, e.g. £2 for just one tiny ball, its unnecessary and a waste of money, so make your own.

These are great as snacks to carry with you throughout the day and once you make a big batch, you can keep it for quite a while.

Sounds preppy, but they are honestly super good for you! Due to so many energy dense ingredients they aren't just a 'pick me up' but give you consistent energy instead of the sugar rush followed by a lull.

 

Ingredients

Mixture:

3-4 Cups of Pitted Dates

1 Cup of Cashews

½ Cup of Almonds

1 Cup Ground Oats

1/2 Cup Coconut Chips ( or even flakes)

¼ Cup water

3 Tbsp Chia Seeds

1 Tbsp Almond Butter (or any nut butter [but not necessary])

1 Tsp Cinnamon Powder

1 Tsp Cardamom Powder

Pinch of Salt

Coating Crumb:

4 Oat Biscuits (I crushed them using the mortar you see below in the silver bowl)

3 Tbsp Oats

(I realise that my list of ingredients is long but thats just how I like to make things, not minimalistic, but these are just as good with even a few of the things above!)

Method

  • Place all the ingredients for the mixture in a food processor and blitz until you get a paste like consistency. Do make sure that you don’t blitz it too much as its nice to have some crunchy bits of the nuts still in there.

  • Crush the oat biscuits into a powder like consistency and mix with the ground oats.

  • Lay this out on a flat plate.

  • Just using your hands, roll the mixture into bite size balls and then coat with the oat crumble.

  • Place in the fridge to set overnight.

  • Now just store them in an air tight jar and they are ready to be devoured.

There are so many different ingredients you could substitute in these. Change the nuts, instead of using dates use figs, add cocoa powder and so on.

If you want them sweeter you can also add in honey but honestly the dates are so sweet that you don’t need it.
